In 2023, the Passionata was awarded at the Italian Senate as an “Italian Excellence”. The prestigious award ceremony took place in the “Caduti di Nassirya” Hall in Rome, recognizing the cultural and artisanal value of this exceptional Apulian dessert.
The award was received by pastry chefs Lucia Casoli and Nicola Mecca, creators of the dessert and owners of Pasticceria Casoli in Troia, located in the Daunian Mountains.
The Passionata: a dessert that speaks of Apulia
The Passionata is more than just a sweet treat: it’s a symbol of Apulian culinary identity. It takes the form of a small dome made of almond paste, filled with a soft cream made from a blend of cow’s, sheep’s, and buffalo’s ricotta, resting on a thin layer of sponge cake. The white decorative rose on top is inspired by the famous Romanesque Cathedral of Troia, one of Apulia’s architectural gems.
Today, the dessert is available in eleven different flavors, including variations inspired by local ingredients such as Nero di Troia wine, Moscato di Trani, Bronte pistachio, and Strega liqueur from Benevento.
